Can US propagate through agricultural products?

Since an agricultural product (mainly fruits and vegetables) is a
complex biological structure, it seems to me that it may be quite
difficult to evaluate using ultrasound. Is anybody familiar with
work performed for the evaluation of the quality of agricultural
products? What is the conclusion?
