It's certainly not a major application, but it can be done. We recently supplied equipment to a customer who is evaluating the freshness of watermelons by looking at longitudinal wave transit time in a low frequency (100 KHz) through transmission mode.
I am also aware of similar testing involving potatoes, and I suspect that with sufficient "calibration" research the principle could be applied to many fruits and vegetables that get softer and/or change water content as they ripen. Bon appetite!
