Try reading the manual, they usually have a section on basic calibration.
Calibration specifics depend on the type of probe and blocks you have and the intended application.
Best way is to attend training course as calibration is only the start, if you intend doing some useful work you need to get some guidance.
Thats why certification schemes call for record of training and experience under guidance.
Like most things, its not really as simple as experienced technicians make it look.

Hi Cameron, USM 25 is a very nice piece of equipment, go to CAL functions, If you are using staight beam, introduce Reference echo 1 and echo 2 as the distance matching 2 consecutives back wall reflection on you standard block, you may use the first back wall and the second back wall reflections, lets do it simple, imagine you have a 10 mm thick cal block if it is steel go to the base menu and introduce a velocity similar to the steel normally this equipment will handle 5920 m/s, then go to CAL and with the transduer on the block identify both fist and second back wall reflections, introduce REF 1 as 10 mm and REF 2 as 20 mm position he gate on echo 1 (first back wall reflection) then press copy and a message echo 1 is recorded will be displyed and then on do the same on echo 2 (second back wall reflection), the equipmente will automatically calculate the velocity and the P delay.
you can do the same with an angle beam block but keep in mind that velocity should be around the half of 5920 m/s and echoes to select should be 25 mm and 100 mm with a range of 250 mm. once the equipment is calibrated you may change the range without disturbing the calibratio
