the questions about the hardness depth inspection with UT

Dear all,
we use the UT to inspect the depth of the hardness, the probe is the angle beam probe, and the angle is 41¡ã,the mode is OT, the thransducer is ¦Õ6.35mm, the emergency point is 14mm for the raceways and 5.5mm for the gears.
But i don't know why we use the angle probe? why not use the probe without angle? if we choose the angle probe ,then how to select the angle?( Because i am a new guy in this field, i only know some knowlege about the UT)
